Lentil Dip Bowl

This vibrant bowl features fragrant saffron rice as a base, topped with crispy falafel and a generous dollop of your choice of Maazah Lentil Dip for a burst of flavor. Finished with a colorful medley of pickled cabbage, fresh vegetables, and crispy chickpeas, this dish is a delightful blend of textures and tastes in every bite!

Ingredients

  • 1 cup basmati rice

  • 1/2 teaspoon saffron threads, steeped in 2 tablespoons warm water

  • 2 cups water

  • 1 tablespoon olive oil

  • Salt to taste

  • 6 falafel balls (store-bought or homemade)

Directions

Prepare the Saffron Rice:

Rinse the basmati rice under cold water until the water runs clear.

In a medium saucepan, heat olive oil over medium heat. Add the rice and sauté for 1-2 minutes, coating the rice in the oil.

Add 2 cups of water, the steeped saffron with its liquid, and salt. Bring to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes, or until the rice is cooked and fluffy. Remove from heat and set aside.


Assemble the Bowl:

Start with a generous scoop of saffron rice as the base. Add 2-3 falafel balls to each bowl. Add a large spoonful of your preferred Maazah Lentil Dip (choose from Basil Jalapeño, Lemon Tahini, Roasted Red Pepper, Turmeric Ginger) for a flavorful layer.


Add the Toppings:

Arrange pickled cabbage, cucumber slices, radish slices, jalapeño slices, and watercress or arugula around the bowl for a mix of textures and colors.


Finish with Crispy Chickpeas:
